Thanks for the write up and the feedback, I appreciate both.
As for the fronts not locking up, you should be good with a 1" especially with a booster, you may need to adjust the pedal or check that the booster is working correctly. Another member installed a aftermarket 1" and it is working great after it was adjusted correctly. You can go with a larger bore if all else fails.
On the rotors, did the machinist put a 45 deg chamfer on the back side? This is pretty critical as the hub is not a 90 deg angle where it transitions so the chamfer allows the disc to sit flush without over boring the opening.

If the front wheels are not locking and the rears are, you'll loose control in a panic stop. In my case, even though I don't have a disk conversion, I put a limiting pressure valve for the rears when I installed my brake booster. You are very correct Esteban, as always, the rears must be adjusted as well to get the entire system working well.
