Good stuff here; I used this thread to help find my new wheels. Went with FJCO 16x6 Aluminum Wheels with 265/75/16 BFG T/A KO3 (31.7" x 10.4"). Highlighted green in the attached table. Compared to the OEM wheels with 29" x 7" tires (highlighted blue), the new set-up pushed the wheels out 2.6" and closed the gap to the fender by 1.3" (red boxes). Here's a pic of the outcome and a table comparing some other options I looked at. Attached the Excel file in case anyone want to use it.

Mark,

Excellent work with that table. So much valuable information in one place, with lots of research. Many thanks.

Not to brag buuuut...
Good thing that Patrol has new springs to accommodate the extra height. ;)

Hah, no doubt on the new springs, Leslie. Much appreciated! I ordered the wheels first, mounted them, and mocked-up cardboard wheels to check the fit. Happy surprise on what I could fit. Would still want to add height if serious about going offroad. Here's what the same sized tires looked like on my old '67 halfway through the job (Alcan's upfront, original springs out back). Definitely much tighter.

I have been eyeing the FJ Company wheels. Love to see this post that they worked well!

Would a 16 x 8 (0 offset) push you flush with the fender?
